The distillation process transforms the mash (moromi), which reaches an alcohol content of 7% to 9% during the fermentation stage, into a high-proof spirit using a set consisting of a still and a condenser. We manufacture pot stills, which are a type of single (batch) distillation apparatus. These come in a set: the wash still, which distills the mash to obtain a slightly higher alcohol content, and the spirit still, which distills the resulting liquid a second time.
