  • Our Company's Strengths and Features

380 years of history and tradition

We have been continuing to preserve the manufacturing techniques passed down through generations and our commitment to Hatcho miso.

Hatcho miso is made from only soybeans and salt, prepared in a large wooden vat, and weighed down with natural river stones piled
like a mountain by hand by craftsmen, and matured in the climate of this Hatcho Town (former Hatcho Village)
for two summers and two winters (over two years) by natural brewing.
The taste is characterized by a rich, concentrated umami of soybeans, a little sourness, and an astringent
    unique flavor.

In recent years, it has become possible to make miso in as short a time as a few months using a process called “speed brewing,” in which miso is brewed in stainless steel or other tanks and artificially heated to speed up the
    ripening process.
However, KAKUKYU has maintained the traditional method since the early Edo period,
brewing in wooden vats and natural brewing.

This year marks our 380th anniversary, loved by everyone.
